Step 1
Get the pork belly ready: Preheat the oven to 375°F (190°C). Cut the pork belly into thin, bite-sized pieces or cubes. Because of the size of the cube, the cooking time is shorter.

Marinate the Pork Belly: Mix rice vinegar, grated ginger, minced garlic, sesame oil, honey, soy sauce and hoisin sauce in a bowl.
Step 3
Transfer the pork belly pieces to a plate or plastic bag, then cover with the marinade. Refrigerate the dish or bag for at least two hours or overnight.
Step 4
Cooking the Pork Belly: After removing the pork belly from the fridge to marinate, let it come to room temperature for 15 to 20 minutes.
Step 5
Next, place the pork belly on a wire rack or a baking sheet lined with parchment paper.
Step 6
Bake the pork in the preheated oven for 30 to 40 minutes.
Step 7
Put the Tacos together: Make sure the corn tortillas are hot. Top each tortilla with a few slices of cooked pork belly. Next, add desired amount of chopped lime, chopped coriander leaves, chopped cabbage, and chopped radish on top.
Step 8
