Step 1
Cut pork belly into 4cm pieces. Place in a shallow dish.
Step 2
Combine sugar, paprika, flour, onion and garlic powder in a bowl. Sprinkle evenly over pork, tossing to coat. Place in the fridge for 2 hours (do not cover the pork with plastic wrap as it needs to dry out).
Step 3
Preheat airfryer to 200°C. Spray pork liberally with oil. Season well. Place half the pork in the airfryer basket. Cook for 15 to 20 minutes, shaking basket halfway through cooking, or until just starting to char and pork is cooked through. Transfer to a bowl. Repeat with remaining pork.
Step 4
Meanwhile, make the sticky golden syrup sauce. Place butter, golden syrup, barbecue sauce, bourbon and sriracha in a small saucepan over medium heat. Season. Cook, stirring, for 2 to 3 minutes or until mixture is melted and smooth. Bring to a simmer. Simmer for 3 to 4 minutes or until sauce thickens. Remove from heat.
Step 5
Drizzle the pork with the sauce to serve.
