Step 1
Kafta Mix: In a food processor, combine the ground beef, red onion, parsley, red capsicum, lemon zest, mint leaves, 7-spice, cinnamon, chilli flakes (if using), salt, and black pepper. Pulse the ingredients together until well combined, creating a flavorful and aromatic kafta mixture.
Step 2
Prepare the Pita Bread: Cut the pita bread into halves or quarters, depending on the size of the pita. Spread the kafta mixture onto each piece of pita, filling it with the delicious meat mixture. Brush the exposed side of the pita bread with olive oil, which will add a golden and crispy texture.
Step 3
Grilling Method: Preheat the barbecue grill. Place the prepared Arayes on the grill and cook for about 3-4 minutes on each side. Flip them carefully using a spatula or tongs until the meat is well cooked, and the pita bread is nicely toasted. The grilling process infuses the Arayes with smoky flavours, enhancing their taste.
Step 4
Baking Method: Preheat the oven to 200°C. Arrange the filled Arayes on a baking sheet lined with parchment paper. Place them in the preheated oven and bake for approximately 15 minutes, or until the meat is fully cooked and the pita bread becomes crispy and slightly browned.
Step 5
Serve with Fattoush Salad: Once cooked, serve the Arayes with a side of Fattoush Salad, a refreshing salad made with fresh vegetables, herbs, and crispy pita bread croutons. The combination of Arayes and Fattoush Salad creates a well-rounded and delicious Middle Eastern meal.
