Step 1
Add the water and salt to a large bowl or container. Mix until the salt is dissolved.
Step 2
Place the chicken breasts in the bowl, completely submerging in the brining solution. Cover and place it in the fridge to let the chicken brine for 1 – 2 hours.
Step 3
While the chicken is brining, make the seasoning mixture. Add the paprika, brown sugar, garlic powder, onion powder, Italian seasoning, and pepper to a small bowl and mix the combine.
Step 4
At the end of the brining time, preheat the oven to 425℉.
Step 5
Remove the chicken breasts from the brining solution and pat them dry with a paper towel.
Step 6
Use a ziptop bag or a bowl and coat the chicken with the oil and the seasonings. Be sure to get the chicken breasts well coated with the seasoning.
Step 7
Place the chicken on a sheet pan or baking dish and bake for 16-20 minutes or until the internal temperature reaches 160°F.
Step 8
Remove from oven and let rest for 5-10 minutes. The carryover cooking will bring the chicken to 165°F without overcooking.
