Step 1

In a large pot, over medium heat, melt butter and heat olive oil.

Step 2

Once butter is melted add in celery and cook for about 5-10 minutes until soft.

Step 3

Add in garlic and stir. Let cook for 2 minutes.

Step 4

Add in carrots and seasonings.

Step 5

Add in flour. Stir until everything is combined.

Step 6

Stir and cook flour mixture for 2 minutes.

Step 7

Add in chicken broth and stir well to break up any clumps.

Step 8

Add in milk and heavy cream, stir.

Step 9

Toss in frozen spinach and cooked, shredded chicken, stir.

Step 10

Turn up heat and bring soup to a boil.

Step 11

Gently add gnocchi to soup and boil for 4-5 minutes.

Step 12

Serve Hot/Warm.
