Step 1
First prepare the mushrooms. Wash and clean the mushrooms. Pat dry and cut them each in half.
Step 2
In a large saucepan over medium-high heat, add a little oil and saute the ginger and garlic until fragrant. This should take just about a minute.
Step 3
Then add all the mushrooms to the pan. Turn the heat to high and saute for a few minutes, until the mushrooms start to brown. Add the shaoxing wine and cook for another minute.
Step 4
Then add the chicken broth, oyster sauce, soy sauce, and sesame oil. Stir to mix everything. Bring to a boil and then turn the heat down to medium.
Step 5
Cook for another 15 minutes. Stir every couple of minutes to make sure the mushrooms cook evenly. Keep cooking until most of the liquid has cooked down, but the dish is still super saucy.
Step 6
Add half of the green onions. Mix and cook for another minute. Then plate and top with the other half of the green onions. Eat and enjoy!
