Step 1

Cook the noodles as per packet directions and place in bowl.

Step 2

Add a little oil and toss to coat the noodles. cut shallots into 4 cm lengths.

Step 3

Heat oil in wok over high heat. Add the chilli and garlic and stir-fry for 10 seconds.

Step 4

Add the chicken and stir-fry for 2 minutes or until just cooked through.

Step 5

Add the prawns and stir-fry for 2 minutes or until prawns curl and change colour.

Step 6

Add the noodles, shallots, dark soy sauce and light soy sauce and stir-fry for 2 minutes or until combined.

Step 7

Transfer the noodle mixture to a heatproof bowl. Add the egg to the wok and cook for 30 seconds.

Step 8

Return the noodle mixture to the wok and stir-fry for 1-2 minutes or until egg is cooked and combined with the noodle mixture.

Step 9

Remove from heat, add bean sprouts and combine before serving.
