Whisk the eggs.

Add the coconut flour and whisk to combine.

Season to taste with salt.

Add the scallions and mix to combine.
Step 5
Heat the oil in a nonstick pan over medium heat.
Step 6
Pour in half of the mixture.
Step 7
Cook for 3-4 minutes per side.
Step 8
Remove the pancake from the pan.
Step 9
Add the remaining mixture to the pan.
Step 10
Cook for 3-4 minutes per side.
Step 11
Cut the pancakes into small pieces.
Step 12
Sprinkle with extra scallions (if using) and serve.
