Step 1
Chop some green onions into bite-sized pieces.
Step 2
Slice 1/2 of an onion.
Step 3
Cut some dried chilies into nice, little chunks. If you want to reduce the spicy level, remove the seeds.

Cut 600 grams of chicken into bite-sized pieces. Set it aside.
Step 5
In a large mixing bowl, put 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, 2 tablespoons of Mirin, 1 tablespoon of corn syrup, 1 tablespoon of minced garlic, 1 tablespoon of sesame oil, a few shakes of black pepper and give it a good mix.
Step 6
Pour it over your chicken and give it a good massage. To deepen the flavor, let it sit in the fridge for at least 30 minutes.
Step 7
Put some oil in a pan and place it over medium heat. Once it gets nice and hot, add the green onions and make some green onion oil. (Save some green onions for garnish.)
Step 8
Add in your dried chilies and stir this around for 1 minute.
Step 9
Add in your chicken. Change the heat to high heat and stir everything together.
Step 10
When the chicken is just about done, add in your onions. Toss it around for about 1 minute.
Step 11
Transfer it to a serving plate. Finish it off with some green onions and sesame seeds. Serve with a bowl of hot rice. Enjoy~!
