Add the chilli jam, soy sauce and chicken stock to the pork mixture and toss until well combined. Divide the rice and chilli jam pork among serving plates or pile onto a serving platter. Coarsely chop the peanuts and slice the chilli. Sprinkle the peanuts, chilli and basil on top of the pork to serve.
