Step 1
Place a large frying pan over high heat.

While the pan heats up, peel and finely grate the ginger. Peel and crush the garlic.

Once the pan is hot, add the oil then the pork. Cook, breaking up the mince with a wooden spoon, for 2-3 minutes or until well browned.

Meanwhile, cut the red onion into wedges. Cut the green beans into 5cm lengths.

Add the ginger, garlic, onion and beans to the pan and cook, tossing, for 2 minutes or until the onion softens slightly.

While the bean mixture cooks, microwave the jasmine rice following packet directions.
Step 7
Add the chilli jam, soy sauce and chicken stock to the pork mixture and toss until well combined. Divide the rice and chilli jam pork among serving plates or pile onto a serving platter. Coarsely chop the peanuts and slice the chilli. Sprinkle the peanuts, chilli and basil on top of the pork to serve.
