Step 1
Marinate chicken with salt, pepper, cornflour (cornstarch) and soy sauce. Leave aside for 15-20 mins.
Step 2
Heat oil in a pan and fry the chicken on medium-high heat. Take out and keep aside when cooked.
Step 3
Mix all the sauce ingredients together.
Step 4
In the same pan, in the leftover oil add the chopped garlic. Don't use garlic paste or crush it. When the garlic starts to get golden add the white parts of the spring onion. Stir for 2 minutes.
Step 5
Pour in the sauce and simmer for another 2 mins. Then add the chicken stock depending on how much sauce you want. Mix and taste for salt. If you are using chicken stock cube (see note) then you might not need salt.
Step 6
Bring the stock to simmer then thicken with cornflour (cornstarch) slurry. Pour very gradually and keep stirring, you might not need all of it.
Step 7
Add the fried chicken and mix.
Step 8
Add green part of the spring onion and sliced red chilies (the mild ones). Cook for 2-3 minutes and then turn off flame.
Step 9
Garnish with some more green onion and sesame seeds. Serve hot!
