Step 1
Combine the warm milk, yeast and honey in a cup and mix. Set aside for 3 minutes until you see a foam appear on top.
Step 2
Now add the egg, melted butter and mix.
Step 3
In another large bowl, add the flour, dried herbs, fresh parsley, chives, salt and mix very well.
Step 4
Now pour in the liquid and stir with a wooden spoon, if using a stand mixer, mix on medium to low speed.
Step 5
Transfer the dough to a clean surface, and knead the dough for about 5 minutes or until it is smooth and when poked, springs back.Note: The dough will be semi sticky. Try to avoid using more flour, but if you find it too sticky, add a sprinkle of dough to the surface to help.
Step 6
Place the dough in a large bowl and cover. Set aside in a warm place to rise for about 2 hours or until it has doubled in size.
Step 7
When the dough has doubled in size, punch it down to release the air.
Step 8
Transfer the dough to a clean surface. Divide the dough into 12 equal pieces. I weighed my dough. Aim for about 59 to 61 grams each.
Step 9
Using your clean hands, shape each piece of dough into a smooth ball making sure to roll the dough on the counter at the end to smooth the seam. Repeat this step for the remaining 11 pieces.
Step 10
Butter a regular 9 x 13 baking dish and arrange the balls of dough. See image above for reference.
Step 11
Preheat Oven 375 F
Step 12
Cover the dish and set aside to rise again in a warm place for about 1 hour or until it’s puffy, supple and risen.
Step 13
Once the dough has risen, brush the rolls with an egg wash and top with flakey salt, sesame seeds and freshly cracked pepper.
Step 14
Bake in the oven on the middle rack for about 37-40 minutes or until golden and top is hard to the touch ( aka crunchy). Make sure to keep an eye on them, because everyone's oven temperature runs differently.
Step 15
Once they are baked and hot out of the oven, thinly slice Danish Creamy European Style Speciality Garlic Salt & Rosemary Salt and place them on top of the dough.
Step 16
Now watch them melt and do their magic. Your kitchen is going to smell real good!
