Step 1
Whisk the flour, baking soda, and salt together in a medium bowl. Set aside.

In a separate bowl, beat the butter and granulated sugar until smooth. Then, add the brown sugar, and beat until creamy.

Add the egg yolk and vanilla and beat until combined.
Step 4
Add the dry ingredients to the wet ingredients, and mix on low until combined.
Step 5
Stir in the chocolate chips and walnuts.
Step 6
Gather the dough into a rough ball in the bowl, and then refrigerate (leaving it in the bowl) for 30 minutes. You can chill it much longer, but let it rest at room temperature for an hour before attempting to scoop.
Step 7
Preheat oven to Roll into 2 TB size dough balls (weighing roughly 46 grams each), and space on baking sheet.
Step 8
Bake for 13-15 minutes. Let cool on cookie sheet for 5 minutes before moving to a wire rack to cool completely.
