Step 1
Preheat the oven to 375°F (190°C).
Step 2
Rinse the sushi rice in cold water and drain. In a medium saucepan, combine the rice and water. Bring to a boil over high heat. Reduce the heat to low, cover and simmer for 20 minutes or until the water is absorbed.
Step 3
In a small saucepan, combine the rice vinegar, sugar and salt. Cook over medium heat until the sugar dissolves.
Step 4
In a large mixing bowl, combine the cooked rice and vinegar mixture. Stir until well combined.
Step 5
In another mixing bowl, combine the mayonnaise, soy sauce, sriracha, garlic powder, onion powder, ground ginger and black pepper. Stir until well combined.
Step 6
Add the avocado, cucumber, green onions, nori sheets and sesame seeds to the mayonnaise mixture. Stir until well combined.
Step 7
Add the mayonnaise mixture to the rice mixture. Stir until well combined.
Step 8
Transfer the mixture to a baking dish. Bake for 20 minutes or until the top is golden brown.
Step 9
Remove from the oven and let it cool for 5 minutes before serving.
