Step 1
On a large platter, add the pork chops and season them with the salt, the black pepper, and the all-purpose seasoning on both sides.
Step 2
In a large skillet over medium-high heat, heat the olive oil until it is shimmering.
Step 3
Add the seasoned pork chops to the heated olive oil and sear on each side until browned, about 3 minutes per side.
Step 4
Transfer the pork chops from the skillet to a clean large platter.
Step 5
In the same large skillet, add the onions and the garlic and sauté until softened and translucent.
Step 6
Add the flour to the onion mixture and cook, while stirring, until lightly golden, about 1 minute.
Step 7
Add the beer, the brown sugar, the ketchup, the thyme, and the bay leaf to the onion mixture and stir to combine.
Step 8
Add the pork chops to the sauce mixture and simmer, uncovered, until the pork reaches an internal temperature of 145 degrees F and the sauce has thickened, about 10 minutes. Make sure to turn the pork at least once during the simmering.
Step 9
Remove and discard the bay leaf.
Step 10
Serve.
