Step 1
In a mixing bowl, combine the first four ingredients.
Step 2
Slice an onion into rings and set out the tilapia fillets.
Step 3
Pour about 1" - 1 1/2" canola oil into a Dutch oven or 4 to 5-quart pot and set on medium heat. Dip the onion rings into the batter.
Step 4
Make sure the oil is hot enough (approx 375 degrees), using tongs, place the onion rings in the hot oil (do not overcrowd). When they are light brown, they are ready (about 2 - 3 minutes).
Step 5
Allow them to drain for a minute on paper towels.
Step 6
Do the same with the tilapia fillets. Coat with the batter.
Step 7
Fry tilapia fillets for approximately 3 minutes until golden brown.
Step 8
Drain and serve accompanied with the onion rings and a green salad.
