Step 1
Whisk together the egg, yolk, lemon juice and 3 tablespoons iced water. Leave in fridge until needed.
Step 2
Sift flour, salt and icing sugar in large bowl. Rub in the butter using fingertips until the mix is crumbly and rough.
Step 3
Make a well in the centre, add egg mixture and use a round bladed knife to bring the mix together until it is doughlike.
Step 4
Turn onto a floured surface and knead gently until smooth.
Step 5
Wrap in clingfilm, chill for at least ½ hour.
Step 6
Roll to desired sie and bake pastry at 200C.
