Step 1
Using a toothpick or skewer, dunk one cherry into the yogurt and swirl to coat. Allow the excess to drip off and then place the cherry on a lined cookie sheet or plate. Repeat with the remaining cherries then freeze for 10-15 minutes set.
Step 2
In the meantime, combine the chocolate chips and coconut oil in a microwave safe bowl and heat in 10 second intervals, stirring in betwene, until melted. Be careful not to overheat. It's better to pull it out while the chocolate is still lumpy and stir until smooth rather than trying to get it to melt completely in the microwave. Tip: This can also be done on the stove using a double boiler.
Step 3
Allow th chocolate sauce to cool slighly then dip each yogurt-covered cherry into the chocolate. Drip off any excess, then place on the cookie sheet and freeze until firm. Minimum one 1 hour or up to overnight. Store leftovers in an airtight container in the freezer to enjoy whenever you're craving something sweet!
