Step 1
Preheat oven to 350 degrees F and line an 8×8 baking dish with parchment paper. In a food processor or high-speed blender (I use ninja kitchen or vitamix), combine eggs, cottage cheese, and vanilla until smooth. Pour in melted chocolate and puree again until combined.
Step 2
Whisk together flour, baking powder, sweetener, and cocoa in a medium mixing bowl. Pour cottage cheese mixture into dry ingredients and stir until just combined.
Step 3
Pour batter into the prepared baking dish and bake for 20-25 minutes (or until a knife comes out cleanly from the center of the pan. Let the pan cool completely on a wire rack before slicing into 9 brownies.
