Step 1

To prepare this healthy drink, start by taking the black carrots and washing them under running water. Then, peel then and using a clean chopping board, chop them into small sticks.

Step 2

Now, take a deep bottomed pot over medium flame and add water to it. Bring the pot to a boil and turn off the flame as it starts boiling. Then, add the chopped carrots along with the rock salt, red chili powder, mustard powder and the asafoetida and mix. Let the mixture cool down for a while.

Step 3

When the mixture has cooled down, transfer it to a sterilized jar and close the lid very tightly. Place the jar under the sunlight and let it ferment. (Note: If there isn’t enough sunlight, place the jar in a warm place.)

Step 4

After a few days, check the taste of the drink. If it tastes sour, the Gajar ki Kanji is ready. The fermentation process can take from 2-3 days to 6-7 days, depending on the weather of the area. In warmer weather conditions, it takes less time than in a cold weather.

Step 5

When the Kanji is done, pour it in a glass and drink it just before dinner. Store it for later use and enjoy! (Storing in a warm place will keep the drink good for a week, whereas, keeping it refrigerated will keep it good for up to six months.)
