Step 1
Preheat your oven to 350 degrees and grease an 8x8 baking pan. Set aside.

Prepare your flax egg by mixing together 1 tablespoon ground flaxseed and 3 tablespoons of water. Set aside to thicken.
Step 3
In a stand mixer, beat together the softened vegan butter, white and brown sugar, vanilla extract and thickened flax egg.
Step 4
Add in the gluten free flour, baking powder, salt and spices and mix until combined, scraping down the sides of the bowl if necessary.
Step 5
Stir in the processed gluten free oats and 1/2 cup of mini chocolate chips.
Step 6
Pour the batter into your prepared baking dish and even it out with a spatula. Sprinkle more chocolate chips over the top if desired.
Step 7
Place the pan in the oven and bake for 20-25 minutes or until the edges start to turn golden brown.
Step 8
Remove the pan from the oven and allow the blondies to cool completely before cutting into 16 squares.
