Preheat oven to 400º

Spray baking sheet lightly with non stick cooking spray.
Step 3
Wash and slice peppers in half lengthwise, I like to leave the stem attached as it just adds a pretty touch to the finished peppers. Remove the seeds and ribs inside of pepper.
Step 4
In a small bowl mix goat cheese and all other ingredients until well combined.
Step 5
Scoop a heaping spoon of goat cheese mixture into each pepper.
Step 6
Bake peppers for 11-13 minutes, until edges begin to brown and cheese mixture softens.
Step 7
Serve immediately for best flavor and texture.
Step 8
You can make the peppers up the night before and bake just before serving.
