Combine first 4 ingredients in a large mixing bowl; mix well, and set aside. Combine eggs, corn, milk, and 2 teaspoons vegetable oil; mix well. Stir corn mixture into dry ingredients.
Step 2
Drop mixture by rounded teaspoonfuls into vegetable oil heated to 375 ˚; cook fritter until golden, turning once. Yield: about 3 dozen.
