Preheat the oven to 375° F.Heat a large pot of salted water to a boil over high heat.Add the green beans to the water and blanch for 5 minutes if using fresh or 3 minutes if frozen

Drain them in a colander set over the sink

Place them in a 9x13 baking.Melt the butter in a large skillet over medium-high heat, until bubbly

Add the flour, onion powder, garlic powder, pepper, salt, nutmeg and dijon to the pan

Mix until combined.Whisk in the stock and whisk until there are no longer any lumps left

Pour in cream and stir until fully combined

Bring the mixture to a simmer and cook until it has thickened, stirring occasionally, about 5 minutes.Pour the sauce over the green beans in the baking dish and stir to combine.Bake for 10 minutes, remove from the oven, toss the green beans so they get recoated with the sauce, sprinkle with fried onions and place back in the oven for 10 more minutes.
