Step 1
In a small bowl whisk together salt, pepper, lemon juice, and 1 Tbsp olive oil. Marinate salmon in this sauce for 10 minutes.

Meanwhile let’s make the Cauliflower Rice. Take one medium cauliflower, wash it and remove leaves. Slice off the florets. Place the florets in the bowl of the food processor. Pulse until the cauliflower is the consistency of grains of rice.
Step 3
Preheat oven to 450 degrees. Place salmon on parchment lined or nonstick baking sheet.
Step 4
Drizzle with oil and sprinkle with salt and pepper. Bake for 15 minutes

Warm the oil in a large skillet over medium-high heat. Add the cauliflower rice, garlic powder, onion powder, salt, and pepper. Stir to coat the cauliflower rice with the spices.
Step 6
Cook the cauliflower rice over medium-high heat, stirring occasionally, until the cauliflower rice is tender, approximately 5 minutes.
Step 7
Divide the rice evenly onto two plates. Place a piece of salmon over the rice. Add fresh chopped herbs. Serve.
