Step 1
Preheat the oven to 350 degrees.
Step 2
Bring the 2 cups of chicken broth to a boil and add in the 2 cups of uncooked long grain rice.
Step 3
Turn the heat down to low/medium and allow the rice to simmer, covered for 15-20 minutes, stirring occasionally.
Step 4
Place the broccoli florets in a microwave safe dish and add 1" of water. Place in the microwave and heat for about 3 minutes (or until tender). Remove from the microwave and set aside.
Step 5
Heat the 2 tablespoons of butter and diced onion in a medium skillet. Saute the onion until tender, about 10 minutes.
Step 6
Combine the cooked rice, broccoli, cream of chicken soup, milk, onion and salt & pepper in a large casserole dish or dutch oven.
Step 7
Bake for 30-35 minutes.
