Clean up and trim the ribs.

Season with Dirty Bird.
Step 3
Cook at 275ºF / 135ºC for about 3-4 hours.
Step 4
Bring the ribs off the heat when the meat pulls back from the bones.
Step 5
Foil and for 15-20 minutes.
Step 6
Separate the ribs and apply the rib glaze.
