Step 1

Heat a large sauce pan over medium heat.

Step 2

Spray with olive oil and add in the shallots, cook for 5 minutes until soft.

Step 3

Add in the garlic and cook for 1 minute.

Step 4

Pour in the bourbon and stock, and bring to a simmer, then reduce heat to low and cook for 10 minutes.

Step 5

Add in the remaining ingredients and 1 cup of water. Bring to a simmer and cook, stirring often for 10 minutes.

Step 6

Reduce the heat to low, cover and cook for 45 minutes, stirring often to avoid burning.

Step 7

When the sauce has thickened and reduced by 1/3, remove from heat and cool (it will thicken much more as it cools!)

Step 8

Keep the homemade barbecue sauce in an airtight container, it will hold in the fridge for up to 7 days, or in the freezer for 3 months.
