Step 1
Mix oatmeal, flour, baking powder, cinnamon and salt in a small bow. Set aside.
Step 2
In a larger mixing bowl, add eggs, honey and brown sugar and mix well. Add dry ingredients and mix well. Fold in berries.
Step 3
Grease molds with nonstick cooking spray and use a 3 tablespoon portion scoop to fill each cup.
Step 4
Place 1 cup water and trivet into instant pot. Fold a long piece of foil in thirds. Set one mold onto the foil in the center and bring up the loose foil sides. Lift the foil and set 1 mold onto the trivet in the pot and place a small piece of foil, greased with cooking spray, on top of the mold. Place the 2nd mold into the instant pot. Tuck in the loose ends of the foil so they do not extend over the top.
Step 5
Place the lid on the pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 10 minutes. When cooking cycle is complete, let pressure naturally release for 10 minutes before opening pot.
Step 6
Serve dusted with powdered sugar.
