First begin by chopping all the vegetables and grate the cheese and put to one side.Quesadilla Filling :: Take the mince meat and oil and fry in a pan for about 5 min, with the spices (chilli powder, sweet paprika, cumin, oregano, and salt) and corn flour add about 3 tbsp of water to create a sauce. Mix well. Add the vegetable to the mix and continue to cook for a further 5 min on a medium to high heat. Once cooked put to one side.Take your fresh tortilla wraps and heat them a either a skillet or frying pan for 1 min to soften them a little more, otherwise they will break when you fold them. Take 1 serving of Quesadilla filling and place to one side of the tortilla wrap, add the disrepute the cheese and coriander evenly on each wrap. Repeat until all four have fillings.Now fold the wraps in half to create a shell like shape and flatten on top. cook for 3 min one side then flip. Once cooked transfer to a plate and serve with a fresh salad.
