Step 1
In a small bowl, stir together the garlic, ginger, no-sodium soy sauce substitute, sherry or wine, and 1 teaspoon of the oil. Set aside.
Step 2
Preheat to medium high a skillet large enough to hold all of the fish filets without overlapping
Step 3
Add the oil and swirl to coat the skillet bottom
Step 4
Add the fish filets. Cook on medium high for 3 minutes without turning.
Step 5
Reduce heat to medium. Turn the fish filets and pour the sauce over them. Cook uncovered 2-5 minutes on medium heat until fish is opaque and separates easily with a fork. (exact time will depend on the thickness of the filets.)
Step 6
Spoon the sauce over the fish when serving.
