Step 1
Slice the mushrooms lengthways into 3 - 4mm steps .
Step 2
Mix the marinade ingredients together in a bowl. Add mushrooms to a small baking tray and toss with marinade. Allow to soak for 15 - 20 mins. This will soften the mushrooms. Make sure they are fully coated on both side.
Step 3
If using wooden skewers, soak in water for 15 mins so they don't burn.
Step 4
Thread mushrooms bending them once or twice over themselves into an s shape onto skewers.
Step 5
Heat griddle pan or BBQ and spray with oil. Spray mushrooms with oil too and cook for 3 - 4 mins per side till chargrilled and tender. Option to grill in the oven or bake in the oven.
Step 6
Serve with basmati rice, steamed broccoli and toasted sesame seeds.
