Step 1
Generously season the pork chops with salt, pepper, and Italian seasoning.

On the stovetop, heat a large pan over medium-high heat.

Add the olive oil and 1 tablespoon butter to the hot pan.

Once the butter has melted and become bubbly, add the pork chops.

Sear the chops for 3 minutes on each side. Transfer the chops to a plate.

Reduce the heat to medium.

Add 1 tablespoon butter to the hot, empty pan.

Add the chopped scallions, garlic, rosemary, and thyme, and cook until fragrant, about 2 minutes.

Add the remaining 1 tablespoon butter, balsamic vinegar, and honey, cooking until well-incorporated, about 2 minutes.

Add the dijon mustard.

Taste the sauce for seasoning, adding salt as needed.
