Step 1
Put all the mustard seeds, vinegar, and water in a jar with a lid. Put the lid on and let it sit for 48 hours.
Step 2
The next step is to make a fine or coarse paste out of the mustard, depending on your taste. Put the mustard and vinegar mixture into a blender or food processor. Pulse the blender a few times to make a coarse mixture. Pulse longer to make the mustard smoother. Salt it and add seasonings to taste.
Step 3
The mustard can then be put in clean jars that have been sterilized and sealed. Wait two to three weeks before using. If you want to keep the mustard in the fridge for more than a few weeks, you can put the jars in a hot water bath.
