Step 1
First off, clean the potato, wash the spinach (if using fresh spinach), and drain and rinse off the chickpeas (if you are using canned chickpeas).

Then peel and chop up the red onion, fresh ginger, and garlic.

Add olive oil to a pan and add in the chopped red onion and place it on a stovetop with the setting on medium flame/heat. Saute onion for 10 minutes, stirring often.
