Step 1

First off, clean the potato, wash the spinach (if using fresh spinach), and drain and rinse off the chickpeas (if you are using canned chickpeas).

Step 3

Then peel and chop up the red onion, fresh ginger, and garlic.

Add olive oil to a pan and add in the chopped red onion and place it on a stovetop with the setting on medium flame/heat. Saute onion for 10 minutes, stirring often.

Then add in the chopped garlic and ginger and saute for about a minute.

Push the sauteed onion, ginger, and garlic to the sides of the pan and add in the chopped potatoes.

Also, add in the frozen spinach and place a cover on it for about 10 minutes or until the potatoes are tender.

Then add in the chickpeas, the coriander, turmeric, and smoked paprika and saute for about 2 minutes, stirring often so all the spices are incorporated throughout the other ingredients.

Step 15

Turn the stove off and remove the pan from the heat.

Step 17

Season the saute with salt and pepper to taste.

Step 19

Chop up the parsley and sprinkle it over the potatoes, chickpeas, and spinach, and dig in!
