Step 1
Place ajwain seeds and cumin seeds into mixing bowl and roast 3 min/120°C/speed 2.
Step 2
Place all remaining ingredients, except onions and oil, into mixing bowl and mix 30 sec/speed 8 or until mixture is thick. Transfer into a bowl and set aside. Do not clean mixing bowl.
Step 3
Place onion into mixing bowl and chop 3 sec/speed 5. Transfer into bowl with flour mixture and stir well with spatula until combined.
Step 4
Line a large plate with paper towel and set aside. Place a large saucepan over high heat and add oil. Heat oil to 170°C (see Tips) and ensure it stays at 170°C throughout cooking (you may need a kitchen thermometer).
Step 5
Working in batches, carefully drop heaped tablespoons of mixture into hot oil and fry for 3-4 minutes or until golden brown and crispy (approx. 20 bhaji in total). Using a slotted spoon, carefully remove cooked bhaji and transfer onto lined plate. Serve with your favourite condiment (see Tips).
