Step 1

Heat the oil in a large non-stick frying pan over medium heat. Add the onion and cook, stirring occasionally, for 4 minutes or until the onion softens. Stir in the ground coriander, cumin, cinnamon and garlic. Cook, stirring occasionally, for 30 seconds or until aromatic. Set aside.

Step 2

Meanwhile, place the lamb in the bowl of a food processor and process until finely minced. Transfer to a medium bowl. Add the onion mixture, fresh coriander, breadcrumbs and milk. Season with salt and pepper, and mix well. Divide the mixture into 4 and shape into square 10cm patties.

Step 3

Heat the non-stick frying pan over medium heat. Add the patties and cook for 4 minutes each side or until just cooked through.

Step 4

To serve, top the toasted bread with the rocket, patties, cucumber and avocado. Sprinkle with pepper and serve.
