Step 1

Preheat oven to 400 degrees Fahrenheit. Spray a large sheet pan with cooking spray or grease with a little cooking oil and set aside (alternatively, line your sheet pan with parchment paper instead of greasing).

Step 2

Pat cod fillets dry of any excess moisture with paper towels, then place the cod fillets onto the prepared sheet pan.

Step 3

Sprinkle each fillet with salt, pepper (use 1/2 teaspoon each of salt and black pepper between all four fillets) and dill. Drizzle with 1/2 tablespoon of olive oil.

Step 4

In a bowl (or you can do directly on the sheet pan), toss bell peppers and broccoli florets with remaining 1/2 teaspoon of salt, remaining 1/2 teaspoon of black pepper, and remaining 1 tablespoon of olive oil. Spread out onto sheet pan around cod.

Step 5

Bake for 16 to 18 minutes or until cod is cooked through, is opaque and flakes easily with a fork (insert the tines of a fork into the thickest part of the fish at an angle and twist gently; it should flake easily).Note: Cook time of the cod may vary, depending on the thickness of your fillets.

Step 6

Serve the cod and veggies, then squeeze fresh lemon juice (to taste) over the cod. This meal is also delicious served with tartar sauce and extra lemon slices or wedges. Enjoy!
