Chop pork shoulder into 1-inch cubes.

In a large pot over medium heat, combine pork, 1⁄2 cup of water, and salt to taste.

Cover and cook for 20 minutes, stirring every 5 minutes.

Uncover and cook, stirring until water evaporates. Set aside.

Tear stems off of chile pods and place your chiles in a medium pot. Barely cover with water, bring to a boil, then drop the heat to simmer until chiles are soft.

Drain chiles and allow them to cool.
Step 7
Add chiles to the blender with half the water, 3 garlic cloves, salt to taste, and about 1⁄3 cup of flour. Blend until smooth.
Step 8
Add lard and chile sauce to the pork, and bring to a boil.
Step 9
Add oregano to taste and serve in tortillas.
