Step 1
Heat a greased barbecue grill or chargrill on medium-high. Cook the prawns on the grill for 2-3 mins each side or until prawns change colour and are lightly charred.
Step 2
Heat a frying pan over medium-high heat. Add the sweet potato noodles to the pan. Cook, tossing, for 3 mins or until tender. Transfer the sweet potato noodles to a heatproof bowl. Add the vegetable mix to the pan. Stir-fry for 2 mins or until tender. Return the sweet potato noodles to the pan with the sweet chilli sauce. Cook, tossing, for 1-2 mins or until heated through.
Step 3
Divide the sweet potato noodle mixture among serving plates. Top with prawns and sprinkle with coriander sprigs.
