Step 1
Set the oven on low broil.
Step 2
Stir together the olive oil, poppy seeds, and minced onion.
Step 3
Use a serrated knife to slice the rolls in half lengthwise (leaving the individual rolls intact). Place the rolls on a sheet pan and then place them under the broiler, watching carefully, until lightly toasted and golden. Remove the rolls from the oven. Set the bottom side of the rolls aside. Flip the top side of the rolls over and brush with poppyseed topping. Turn the oven temperature down to 350 degrees. Return the tops of the rolls to the oven and bake at 350 for 5-10 minutes until golden and toasted. Remove and set aside.
Step 4
Add the pulled pork and bbq sauce to a mixing bowl and stir until well combined.
Step 5
Add the olive oil, vinegar, maple syrup, celery seed, dijon mustard, salt and pepper to a mixing bowls. Whisk together until well combined. Add the coleslaw mix and green onion to the dressing and toss until well combined. Set aside.
Step 6
On the bottom half of the rolls, place 6 slices of gouda cheese, then add the pulled pork mixture, then top with the remaining 6 slices of cheese. Place in the oven and bake at 350 for 15-20 minutes until the cheese is fully melted.
Step 7
Remove the sliders from the oven and top with coleslaw. Then place the toasted top half of the rolls on top. Serve and enjoy!
