Step 1
Start by toasting some bread. Cut the bread in half, and toast in a skillet until lightly browned.

Combine chopped onions, tomatoes, corn kernels, chopped avocado, and the seasonings in a large mixing bowl. Give it a gentle toss and set aside.

Spread a generous amount of vegan mayo on the toasted slice.

Top with shredded lettuce.

Spoon the avocado mix on top of the lettuce.

Next, add some crunch with a handful of fresh shredded lettuce leaves. They add a pop of color and a dose of nutrition to the sandwich.
