Step 1
Season the fish with salt, pepper and sugar and let it marinate for 15 minutes.
Step 2
Put the salted egg yolk into a heatproof bowl and it for 10 minutes. And then mash it with a fork until it turns into a crumble.
Step 3
Add 3-4 tbsp of oil into a medium high heat pan. Add the egg yolk into the pan and cook it until it turns foamy. And then add the ginger and garlic. Cook it for 1 minute, and then set it aside into a bowl.
Step 4
Now it’s time to cook the fish. Pour the white parts of the salted egg into the marinating fish and mix it until all the fish coated with the egg white.
Step 5
Pour the cornstarch into a separate plate, and start coating your fish with the cornstarch.
Step 6
Deep-fry the fish in a separate pan until golden brown. Once the fish is cooked, pull it out and set it aside.
Step 7
Add 1 tbsp of oil and butter into the pan and add the bird’s eye chili. Cook it for 1-2 minutes.
Step 8
Add the salted egg yolk sauce back to the pan. And once the sauce has become foamy, add the fried fish and toss it until evenly coated.
Step 9
Serve it with white rice.
