Step 1
In a casserole dish, place the yellow squash hollowed out in the greased pan.
Step 2
In a small bowl mix rice with carrots, 1 tbsp soy sauce, salt, pepper and garlic.
Step 3
Fill each squash with rice mixture. Set aside.
Step 4
Add salt, pepper, and herbs in a zip lock bag. Add chicken and shake all around to coat.
Step 5
Heat oil and cook chicken on both sides until browned.
Step 6
Place on top of the yellow squash filled with rice.
Step 7
Add ¾ cup water, soy sauce, vinegar on the bottom of the casserole dish. Cover with foil.
Step 8
Bake at 350 degrees for around 35 minutes or until squash is fork tender.
