Step 1

Whisk egg in a shallow bowl.

Step 2

Mix next 2 ingredients in another shallow bowl.

Step 3

Dip pork chops in egg, then onion mixture. Store in a container with lid.

Step 4

Chop bacon and add to a zipper bag with remaining ingredients. Zip to seal.

Step 5

Add pork to a large sheet pan sprayed with non-stick spray. Spray pork with olive oil spray.

Step 6

Bake at 400 degrees for 15 minutes, then add broccoli and bake for another 15 minutes (or until pork is cooked through).

Step 7

Heat black eyed peas and serve as a side.
