Step 1

Heat vegetable oil in a wok and fry shallots until fragrant and light brown (about 5 minutes). Remove fried shallots from wok and set aside.

Step 2

While the oil is still hot, add the rice and stir-fry well (about 5 minutes). Pour in salt, pepper, and soy sauce and continue to stir-fry for another 3-4 minutes. Pour in eggs and fry until properly cooked. The rice should be coated and yellowish-brown in color.

Step 3

Sprinkle the fried shallots over the rice. Dish out and serve with garnishes. Enjoy.
