Step 1
Preheat the oven to 400 degrees F. and lightly spray a 9×13-inch baking dish with cooking spray.
Step 2
In a medium-sized bowl, add the cornbread mix, 1/2 cup of cheddar cheese, milk, egg, and canned corn. Stir until well combined. Pour into the prepared baking dish. Bake for 15 minutes or just until set.
Step 3
While the cornbread is baking, heat a large skillet over medium heat and add the butter.
Step 4
While the butter is melting, chop the onion and bell pepper into small pieces. Add to the pan and cook until just beginning to soften.
Step 5
Add the ground beef to the skillet and cook until no longer pink. Drain the fat.
Step 6
Add all but 1/2 of the sloppy joe sauce to the pan with the meat to warm.
Step 7
Remove the cornbread from the oven and use a fork to prick holes over the cornbread. Pour the remaining 1/2 of the sloppy joe sauce over the cornbread. Spoon the meat and sauce over the baked cornbread and top with the remaining 1/2 cup cheese. Return to the oven for 15 minutes.
