Step 1

Heat a large heavy frying pan over medium-high heat. Add the oil and then add the lamb mince. Cook, breaking up the mince with a spoon, for about 8 minutes, or until brown. If the mince exudes a lot of oil, strain the cooked mince in a sieve and discard the excess oil, then return the mince to the pan.

Step 2

Reduce the heat to medium and then add the onion, capsicum, celery, and garlic. Cook, stirring often, for about 5 minutes, or until the onion begins to turn translucent. Stir in the water and cook, scraping up the brown bits from the bottom of the pan, for about 1 minute, or until the water reduces by about half.

Step 3

Reduce the heat to medium-low. Stir in the tomato sauce, soy sauce, Worcestershire, and tomato paste and cook for about 8 minutes, or until the sauce reduces and the mixture thickens slightly. Season to taste with salt and pepper.

Step 4

Meanwhile, to make the slaw, in a large bowl, whisk the yoghurt, lime zest and juice and cumin to blend. Add the cabbage, cucumber, and mint and toss to coat. Season the slaw to taste with salt and pepper.

Step 5

To serve, spoon the lamb mixture on the bun bottoms, then top with some of the slaw and then the bun tops. Mound the remaining slaw alongside the sloppy Joes and enjoy!
