Step 1
Using a sharp knife or mandoline, thinly slice potatoes and onion.
Step 2
Layer a quarter of the potatoes in the base of a slow cooker. Add a little onion and a little bacon and season well with pepper and some of the chicken salt. Top with another layer of potatoes, more onion and bacon and more chicken salt. Continue layering, finishing with a fourth layer of potatoes. Pour over cream and sprinkle over remaining chicken salt. Cook on high for 4 hours or low for 6 hours until potatoes are tender, adding the cheese to the top in the last half hour.
