Step 1
Preheat your pellet grill to 250°, following factory directions. If you are using another type of grill, make sure you are cooking over indirect heat.
Step 2
Using the whole pound of bacon, make your bacon weave on top of a sheet of plastic wrap and set aside. Follow these instructions if you aren't sure how to make a bacon weave.
Step 3
Lay down the plastic wrap and pat out the breakfast sausage into approximately a 6x6 square.
Step 4
Layer the hashbrowns and cheese over the top and press gently.
Step 5
Roll the sausage up, like a cinnamon roll, into a log.
Step 6
Using the plastic wrap, carefully move the sausage roll onto the bacon weave, and roll off the plastic wrap so it is on top of the bacon.
Step 7
Wrap the bacon weave around the fatty, and either tie with butcher's twine to keep it together or place it carefully on a sheet of non-stick foil (removing the plastic wrap) and place it on the grill.
Step 8
Cook, turning periodically until the internal temp is 165° and the bacon is crisp.
Step 9
Remove, let sit for 10 minutes, and then slice and serve.
